I checked the other plastic connector (from the EOC side) and received above 1650 ohms.

You can determine it by visual EOC inspection and/or by the wiring diagram for your oven (if it is available). Always disconnect power before checking continuity. This happens every time and we have used different oven thermometers in case one was defective. My issue has not changed.
